Lake Shinjiko - the symbol
of Matsue, the "City of Water" - is an estuarine lake containing a mixture
of salt and fresh water. The lake produces an abundance of seasonal delicacies,
the most representative of which are icefish, amasagi, perch, carp, fresh
water shrimps, freshwater clams, and eels. These are known as the "Seven
Wonders of Lake Shinjiko." The freshness and tastiness of the lake's fish
and shellfish are due to Matsue's fortunate climate and, although dishes
incorporating these delicacies appear simple, they are luxurious. These
delicacies can be sampled at restaurants in central Matsue. |
