The distinctive dark color
of Izumo buckwheat noodles is achieved by grinding the seeds and sheaths
together with the grains of the buckwheat. Characterized by their firm texture
and fragrant taste, the noodles are served in round wariko bowls, decorated
with sliced shallots and shredded nori seaweed, and accompanied by a dark
sauce in which the noodles and condiments are dipped before eating. |
